1/ The LALVIN K-1 strain however, quickly starts fermentations due to its killer factor that helps dominate against contaminant yeast and ability to survive in low nutrient and high alcohol conditions.
2/ LALVIN K-1 produces a neutral distillate base low in esters, fusel oils and sulphur off-taints depending on the substrate. The low production of by products avoids masking the natural agave character. Additionally, a higher alcohol yield results due to the sugars being converted to less secondary byproducts and more alcohol and the cuts can be adapted, reducing the eliminated volumes, because of the higher distillate quality.
3/ The LALVIN K-1 quality control specifications ensure that this strain is produced with low levels of bacteria and wild yeast. This minimizes loss of alcohol yield during fermentation.
