The yeast crusts enable alcoholic fermentation inhibitors produced by the yeasts themselves to be fixed and absorbed. Generally, this are fatty medium chain acids, esters, volatile phenols, mycotoxins…
They can be used preventively or when fermentation is halted to eliminate inhibitors before yeasting again.
