Biotechnology, Stellenbosch University, South Africa, supported by Lallemand.
This is a natural cross hybrid between Saccharomyces cerevisiae wine yeasts.
CROSS EVOLUTION™ is recommended for white and rosé wines where mouthfeel
and high aromatic intensity (including ester production) are sought.
